Indian startup Evo Foods has unveiled what it claims to be the first ever heat-stable, plant-based boiled egg.
The product is the latest addition to its plant-based egg portfolio, which includes a mung bean liquid whole egg substitute it debuted last year.
The animal-free product was developed using patent-pending technology that helped the Evo team identify domestic crops to replicate the protein structure of conventional eggs, but with zero cholesterol.
The new “heat and eat” vegan boiled egg was showcased for the first time at an event in Jio World Drive in Mumbai.
The boiled egg was a huge hit and sold out within hours. People who tried the product were left speechless at how it tasted ‘exactly’ like a conventional egg.
“Consumers in India and all around the world are craving nutritious and affordable egg alternatives and Evo is on a mission to accomplish that,” co-founder and COO Shraddha Bhansali said.
“Our plant-based boiled egg which is made with indigenous ingredients matches eggs in taste, texture, price with an easy-to-use heat and eat format.”

Restaurateur Bhansali co-founded the start-up in 2019 after she observed a huge market gap and demand in the plant-based protein sector while handling customers at her restaurant.
The brand specialises in using biotechnology to extract plant proteins and recreate the versatility and texture of real eggs.
The startup’s innovations have attracted a host of big-name advisors on board, including ex-Beyond Meat advisor Dr Joseph Puglisi.
It also secured $1 million in a pre-seed funding round in 2021 – a feat accomplished by no other Indian plant-based protein company till date.
“Innovation and speed is in the DNA at Evo Foods since our ambition is to build a truly global plant-based company from India for the world,” Kartik Dixit, co-founder and CEO of Evo Foods said.
“We are extremely lucky to have a strong team of scientists and engineers who made this feat possible within just a year of R&D including the lockdowns in India.”
The brand is yet to officially launch the liquid egg iteration, which it seems will happen in tandem with the boiled analogue. The brand is also optimistic on expanding to other countries in the near future.
