This traditional Middle Eastern paste is made with sesame seeds and can be enjoyed on its own as a salad dressing, dip, or used as a sauce base.
Get these:
- 1 cup sesame seeds
- 2-3 tablespoons neutral-tasting oil (such as olive oil or vegetable oil)
- Optional: a pinch of salt
Do this:
- Toast the sesame seeds: Place the sesame seeds in a dry skillet over medium heat. Toast them for a few minutes, stirring frequently, until they turn golden brown and become fragrant. Be careful not to burn them. Remove from heat and let cool.
- Grind the sesame seeds: Once the toasted sesame seeds have cooled, transfer them to a food processor or a high-powered blender. Process or blend the seeds until they start to break down into a coarse powder.
- Add oil: While the food processor or blender is running, gradually drizzle in the oil. Start with 2 tablespoons and add more if needed to achieve the desired consistency. The oil helps to emulsify the tahini and give it a creamy texture. If desired, you can also add a pinch of salt at this stage.
- Blend until smooth: Continue processing or blending the mixture until it becomes smooth and creamy. You may need to stop and scrape down the sides of the container occasionally to ensure even blending.
- Taste and adjust: Once the tahini reaches your preferred consistency, taste it and adjust the seasoning if needed. You can add more salt or a squeeze of lemon juice for added flavour, depending on your preference.
- Store and use: Transfer the tahini to a clean jar or airtight container. It can be stored in the refrigerator for up to a few weeks. Before using, give it a good stir, as separation may occur.
