Get these:
- 1 block of firm tofu, drained and pressed, cut into cubes
- 2 tablespoons sesame oil
- 3 cloves of garlic, minced
- 1 tablespoon freshly grated ginger
- 1 red bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 2 tablespoons toasted sesame seeds
- Salt and pepper, to taste
- Cooked rice or noodles, for serving
Do this:
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Add the tofu cubes and cook until they turn golden brown on all sides. Remove the tofu from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, and stir-fry for about 1 minute until fragrant.
- Add the sliced red bell pepper, carrot, broccoli florets, and snap peas to the skillet. Stir-fry the vegetables for 3-4 minutes until they become tender-crisp.
- In a small bowl, whisk together the soy sauce and maple syrup. Pour the mixture over the vegetables in the skillet. Add the cooked tofu cubes and toss everything together until well-coated in the sauce. Cook for an additional 2-3 minutes to allow the flavours to meld.
- Season with salt and pepper to taste. Sprinkle the toasted sesame seeds over the stir-fry and give it a final toss.
- Serve the Sesame Ginger Stir-Fry over cooked rice or noodles. Garnish with additional sesame seeds and chopped green onions, if desired.
