Benne Wafers are thin, crispy cookies with a nutty flavour that are made with sesame seeds and are popular in the Southern United States.
Get these
- 1/2 cup unsalted vegan butter
- 1 cup light brown sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 cup sesame seeds
Do this:
- Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- Melt the vegan butter: In a small saucepan, melt the butter over low heat. Remove it from the heat once melted and set it aside to cool slightly.
- Prepare the batter: In a mixing bowl, combine the melted butter and brown sugar. Stir until well combined and the sugar is dissolved. Add the flour, salt, baking powder, and vanilla extract. Mix until you have a smooth batter. Finally, stir in the sesame seeds until they are evenly distributed throughout the batter.
- Scoop the batter: Using a teaspoon or a small cookie scoop, drop small portions of the batter onto the prepared baking sheet, leaving space between each cookie as they will spread during baking. Flatten each portion of batter slightly with the back of a spoon or your fingers.
- Bake the wafers: Place the baking sheet in the preheated oven and bake for about 8-10 minutes, or until the wafers turn golden brown around the edges. Keep a close eye on them, as they can quickly overcook and become too dark.
- Cool and store: Remove the baking sheet from the oven and allow the wafers to cool on the sheet for a few minutes. Transfer them to a wire rack to cool completely and become crisp. Once cooled, store the Benne Wafers in an airtight container to maintain their crispness.
Benne Wafers are now ready to be enjoyed as a delightful snack or treat. Their delicate texture and rich nutty flavour make them a unique and delicious cookie.
