Get these:

  • 1 block of firm tofu, drained and pressed, cut into cubes
  • 2 tablespoons sesame oil
  • 3 cloves of garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 red bell pepper, thinly sliced
  • 1 carrot, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 2 tablespoons toasted sesame seeds
  • Salt and pepper, to taste
  • Cooked rice or noodles, for serving

Do this:

  1. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Add the tofu cubes and cook until they turn golden brown on all sides. Remove the tofu from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and grated ginger, and stir-fry for about 1 minute until fragrant.
  3. Add the sliced red bell pepper, carrot, broccoli florets, and snap peas to the skillet. Stir-fry the vegetables for 3-4 minutes until they become tender-crisp.
  4. In a small bowl, whisk together the soy sauce and maple syrup. Pour the mixture over the vegetables in the skillet. Add the cooked tofu cubes and toss everything together until well-coated in the sauce. Cook for an additional 2-3 minutes to allow the flavours to meld.
  5. Season with salt and pepper to taste. Sprinkle the toasted sesame seeds over the stir-fry and give it a final toss.
  6. Serve the Sesame Ginger Stir-Fry over cooked rice or noodles. Garnish with additional sesame seeds and chopped green onions, if desired.
